Ingredients:

  • 250g plain flour
  • 125g unsalted butter, cold and cubed
  • 60g cold water
  • 1/2 tsp salt

Instructions:

  1. Add flour, butter, and salt to the Thermomix bowl. Mix for 5 seconds on speed 5 until mixture resembles breadcrumbs.
  2. With the Thermomix running on speed 4, pour the water into the bowl through the lid. Mix until dough comes together, about 10 seconds.
  3. Remove dough from the Thermomix and shape into a ball. Flatten slightly and wrap in cling film. Refrigerate for at least 30 minutes before using.
  4. Roll out the pastry on a lightly floured surface to the desired thickness, then use as required in your recipe.
