Tomato and Cantal Tart
Ingredients:
- Shortcrust Pastry – 300g
- Cantal Cheese – 150g
- Tomatoes – 4 large
- Onions – 2 medium-sized
- Garlic cloves – 2
- Butter – 20g
- Olive Oil – 1 tbsp
- Salt – to taste
- Black Pepper – to taste
- Egg – 1, beaten
Method:
- Preheat your oven to 180°C.
- Roll out the shortcrust pastry on a floured surface to a thickness of about 3mm. Gently lay it onto a 10 inch tart tin and trim the edges neatly.
- Crumble the Cantal cheese and scatter it evenly over the bottom of the pastry case.

- Bake the tart for 35-40 minutes or until the pastry is golden brown.
