Pasta with Zucchini and Salmon Recipe

Ingredients:

  • 1 pound pasta (penne or fusilli)
  • 2 zucchinis, thinly sliced
  • 2 salmon fillets, skin removed and cut into small cubes
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to boil. Add the pasta and cook according to package instructions. When done, drain and set aside.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the zucchini and sauté for 5-7 minutes until golden and tender. Remove from the skillet and set aside.
  3. In the same skillet, add the salmon cubes and sauté for 3-4 minutes until cooked through. Remove from the skillet and set aside.
  4. Add the minced garlic to the same skillet and sauté for 1 minute until fragrant. Pour in the white wine and bring to a simmer. Cook for 2-3 minutes until the wine reduces by half.
  5. Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes until the sauce thickens slightly.
  6. Add the cooked pasta, zucchini and salmon back to the skillet. Toss gently with the sauce until everything is evenly coated. Season with salt and pepper to taste.
  7. Sprinkle the grated parmesan cheese on top of the pasta and serve immediately.
