Tomato soup


Classic Tomato Soup Recipe

Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 2 cans of whole peeled tomatoes (28 oz each)
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Croutons, for serving (optional)
  • Fresh basil, chopped, for serving (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and sauté until softened.
  3. Add the carrot and celery and sauté until softened (about 5-7 minutes).
  4. Add the tomatoes (with their juices), vegetable broth, basil, and oregano. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  7. Return the soup to the pot and reheat if necessary.
  8. Serve hot, garnished with croutons and fresh basil if desired.
