Turbaned Breadsticks

Ingredients:

  • 1 1/2 cups warm water
  • 1 tbsp active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 cups all-purpose flour, plus more for dusting
  • 1/2 cup olive oil
  • 1/4 cup sesame seeds
  • 1/4 cup nigella seeds
  • 1/4 cup black sesame seeds
  • 1 egg white

Instructions:

  1. In a large bowl, combine the warm water, yeast, and sugar. Let sit for 5 minutes, or until the mixture looks foamy.
  2. Add the salt and flour to the bowl and stir until the dough comes together.
  3. Knead the dough for 5-7 minutes on a floured surface, until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  5. Punch down the dough and divide it into 18-20 pieces.
  6. Roll each piece of dough into a 12-inch-long rope and tie it into a knot, tucking the ends underneath.
  7. Place the turbaned breadsticks on a baking sheet lined with parchment paper.
  8. Brush the breadsticks with olive oil and sprinkle the sesame, nigella, and black sesame seeds over them.
  9. Let the breadsticks rise again for about 30 minutes, or until they have puffed up slightly.
  10. Preheat the oven to 400°F (200°C).
  11. Brush the tops of the breadsticks with egg white.
  12. Bake the breadsticks for 20-25 minutes, or until they are golden brown.
