Vegetable Soup

This hearty and healthy soup is filled with fresh vegetables and perfect for a cozy meal on a chilly day. Feel free to customize the vegetables to your liking and add some protein, such as chicken or tofu, for an even more satisfying meal.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 bell pepper, seeded and chopped
  • 1 can diced tomatoes
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the carrots and celery and sauté for 5 more minutes.
  3. Add the zucchini, yellow squash, and bell pepper and sauté for another 5 minutes.
  4. Stir in the diced tomatoes, vegetable broth, oregano, and thyme. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the vegetables are tender.
  5. Add salt and pepper to taste.
  6. Serve hot and enjoy!

Serving Suggestions:

This soup goes well with some crusty bread or a side salad. You can also try adding in some cooked chicken or tofu for extra protein.
