Vegetable Soup
This hearty and healthy soup is filled with fresh vegetables and perfect for a cozy meal on a chilly day. Feel free to customize the vegetables to your liking and add some protein, such as chicken or tofu, for an even more satisfying meal.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and chopped
- 4 celery stalks, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 bell pepper, seeded and chopped
- 1 can diced tomatoes
- 6 cups vegetable broth or chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the carrots and celery and sauté for 5 more minutes.
- Add the zucchini, yellow squash, and bell pepper and sauté for another 5 minutes.
- Stir in the diced tomatoes, vegetable broth, oregano, and thyme. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the vegetables are tender.
- Add salt and pepper to taste.
- Serve hot and enjoy!
Serving Suggestions:
This soup goes well with some crusty bread or a side salad. You can also try adding in some cooked chicken or tofu for extra protein.
