Vegetarian Lasagna Recipe
This delicious and easy-to-make vegetarian lasagna is perfect for a hearty meal or to feed a crowd.
Ingredients:
- 1 box of lasagna noodles
- 1 package of shredded mozzarella cheese
- 1 can of tomato sauce
- 1 can of diced tomatoes
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- 1 tsp of dried basil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F.
- Cook your lasagna noodles according to the package directions. Once cooked, drain the noodles and set them aside.
- In a large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is tender and translucent.
- Add the sliced zucchini and yellow squash to the pan, and sauté until tender.
- Next, add the can of tomato sauce and diced tomatoes to the pan. Bring to a simmer, add the basil, salt, and pepper, and let simmer for 10 minutes.
- To assemble the lasagna, spread a thin layer of the tomato sauce mixture on the bottom of a 9×13 baking dish. Add a layer of the cooked lasagna noodles, followed by a layer of the tomato sauce mixture, and then a layer of shredded mozzarella cheese.
- Repeat these layers until all ingredients are used up, ending with a layer of mozzarella cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the aluminum foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Let the lasagna cool for a few minutes before serving.
Serving suggestions:
Garnish with fresh basil and serve with a side salad and garlic bread for a complete and satisfying meal.
