Velouté with Morels Recipe
Ingredients:
- 2 tablespoons butter
- 1/2 onion, chopped
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh or reconstituted dried morels, cleaned and chopped
- Salt and freshly ground pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
- Melt the butter in a large saucepan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- Sprinkle the flour over the onion and cook, stirring constantly, for 2-3 minutes.
- Add the chicken broth, stirring constantly, until the mixture is smooth and well combined.
- Bring the mixture to a simmer and cook for 20-25 minutes, stirring occasionally.
- Stir in the cream and chopped morels and simmer until the morels are tender, about 10 minutes.
- Season with salt and freshly ground pepper, to taste.
- Garnish with chopped fresh parsley before serving.
Serving Suggestions:
Serve the velouté with morels hot, in small bowls as a starter or accompanied by a side salad for a light lunch. The soup also pairs well with crispy garlic bread or a slice of crusty French bread.
