Velouté with Morels Recipe

Ingredients:

  • 2 tablespoons butter
  • 1/2 onion, chopped
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh or reconstituted dried morels, cleaned and chopped
  • Salt and freshly ground pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. Melt the butter in a large saucepan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. Sprinkle the flour over the onion and cook, stirring constantly, for 2-3 minutes.
  3. Add the chicken broth, stirring constantly, until the mixture is smooth and well combined.
  4. Bring the mixture to a simmer and cook for 20-25 minutes, stirring occasionally.
  5. Stir in the cream and chopped morels and simmer until the morels are tender, about 10 minutes.
  6. Season with salt and freshly ground pepper, to taste.
  7. Garnish with chopped fresh parsley before serving.

Serving Suggestions:

Serve the velouté with morels hot, in small bowls as a starter or accompanied by a side salad for a light lunch. The soup also pairs well with crispy garlic bread or a slice of crusty French bread.
