Verrine of Peppers Recipe

Ingredients:

  • 2 red peppers
  • 2 yellow peppers
  • 1 green pepper
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 3 tablespoons chopped fresh parsley

Instructions:

  1. Preheat the oven to 400°F.
  2. Cut the peppers in half lengthwise, remove the stems, seeds, and membranes.
  3. Place the pepper halves, cut-side down, on a baking sheet lined with parchment paper.
  4. Bake for 15-20 minutes or until the peppers are tender.
  5. Remove from the oven and let cool.
  6. In a small bowl, whisk together garlic, olive oil, balsamic vinegar, oregano, salt and pepper.
  7. Set aside the mixture.
  8. In another bowl, mix together ricotta cheese and chopped parsley.
  9. Spread the ricotta cheese mixture evenly into each pepper half.
  10. Drizzle the balsamic mixture over the stuffed peppers.
  11. Chill the verrines for at least an hour before serving.
