Verrine of Peppers Recipe
Ingredients:
- 2 red peppers
- 2 yellow peppers
- 1 green pepper
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 3 tablespoons chopped fresh parsley
Instructions:
- Preheat the oven to 400°F.
- Cut the peppers in half lengthwise, remove the stems, seeds, and membranes.
- Place the pepper halves, cut-side down, on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the peppers are tender.
- Remove from the oven and let cool.
- In a small bowl, whisk together garlic, olive oil, balsamic vinegar, oregano, salt and pepper.
- Set aside the mixture.
- In another bowl, mix together ricotta cheese and chopped parsley.
- Spread the ricotta cheese mixture evenly into each pepper half.
- Drizzle the balsamic mixture over the stuffed peppers.
- Chill the verrines for at least an hour before serving.
