Oat and Walnut Cookies Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups old-fashioned rolled oats
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat oven to 350°F (177°C).
  2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy. Add egg and vanilla extract, and beat well.
  4. Add flour mixture gradually to butter mixture, mixing on low speed until just combined.
  5. Stir in rolled oats and chopped walnuts until well combined.
  6. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone baking mats, spacing about 2 inches apart.
  7. Bake for 12-15 minutes until cookies are lightly browned on the edges and set in the middle.
  8. Cool on the baking sheets for 5 minutes, then transfer to wire rack to cool completely. Serve and enjoy!
