Verrine of Tiramisu Goat Cheese and Pesto

Ingredients:

  • 6 ounces of goat cheese, softened
  • 1 cup of whipping cream
  • 1/2 cup of granulated sugar
  • 2 tablespoons of pesto
  • 24 ladyfingers
  • 1/4 cup of strong coffee
  • 1 tablespoon of cocoa powder

Instructions:

  1. Begin by beating the goat cheese in a mixing bowl until smooth. Add the whipping cream and sugar and continue to beat until well combined and the mixture has thickened into stiff peaks.
  2. Fold in the pesto until it is evenly distributed throughout the mixture.
  3. Next, split the ladyfingers in half and dip each half into the coffee. Place one half at the bottom of each of the verrine glasses.
  4. Add a layer of the goat cheese mixture on top of the ladyfingers, using a spoon or pastry bag to evenly distribute the mixture.
  5. Add another layer of the dipped ladyfingers on top of the goat cheese mixture, followed by another layer of the goat cheese mixture.
  6. Finally, dust each verrine glass with cocoa powder, and chill in the fridge for at least 2 hours, or until the mixture has set.
