Verrines of Red Fruits with Speculoos Recipe
Ingredients
- 1 cup of fresh strawberries, hulled and sliced
- 1 cup of fresh raspberries
- 1 cup of fresh blueberries
- 1/2 cup of granulated sugar
- 1 lemon, juiced and zested
- 2 cups of whipped cream
- 10-12 speculoos cookies, crushed
Instructions
- In a large bowl, mix together sliced strawberries, raspberries, blueberries, sugar, lemon juice, and lemon zest. Let the mixture sit for ten minutes to allow the sugar to dissolve and the fruit to release its juices.
- Take 4-6 small glasses or jars and layer the fruit mix with whipped cream, starting with the fruit mixture and finishing with a dollop of whipped cream on top.
- Sprinkle crushed Speculoos cookies on top of each glass or jar
- Refrigerate for at least an hour before serving.
