Very Tender Beef Bourguignon Recipe

Ingredients:

  • 2 pounds beef chuck roast, trimmed and cut into 2-inch cubes
  • 1/2 cup all-purpose flour
  • 6 slices bacon, chopped
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 cups red wine (such as Burgundy)
  • 2 cups beef broth
  • 1 can (6 ounces) tomato paste
  • 1 tablespoon dried thyme leaves
  • 6 carrots, peeled and cut into 1-inch pieces
  • 1 pound mushrooms, sliced
  • Salt and pepper, to taste
  • Parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat oven to 325°F.
  2. Coat the beef with flour and set aside.
  3. In a Dutch oven, cook the bacon over medium heat until crisp. Remove bacon and set aside.
  4. In the same Dutch oven, brown beef in batches in the olive oil over high heat. Remove beef and set aside.
  5. In the same Dutch oven, sauté the onions and garlic until tender.
  6. Add wine, beef broth, tomato paste and thyme. Bring to a boil; cook and stir for 2 minutes.
  7. Return beef and bacon to Dutch oven. Cover and bake in preheated oven for 1-1/2 to 2 hours or until beef is tender.
  8. Stir in carrots and mushrooms, and bake for an additional 30 minutes or until vegetables are tender.
  9. Taste the beef bourguignon and add salt and pepper as needed.
  10. Serve the beef bourguignon in bowls, garnished with chopped parsley.
