Zucchini Bites Recipe
Ingredients:
- 2 medium-sized zucchinis
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
Instructions:
- Preheat the oven to 400°F.
- Cut off the ends of the zucchinis and slice them into rounds about 1/4 inch thick.

- In another bowl, beat the eggs.

- Dip each zucchini round into the flour and shake off the excess.

- Repeat for all zucchini rounds.
- Place the coated zucchini rounds onto a baking sheet lined with parchment paper.
- Drizzle the olive oil over the zucchini bites.
- Bake in the preheated oven for 18-20 minutes, or until golden and crispy.
- Remove from oven and let cool for a few minutes before serving.
