Zucchini Bites Recipe

Ingredients:

  • 2 medium-sized zucchinis
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 400°F.
  2. Cut off the ends of the zucchinis and slice them into rounds about 1/4 inch thick.
  3. In a bowl, mix together the breadcrumbs, parmesan cheese, garlic powder, basil, salt, and black pepper.
  4. In another bowl, beat the eggs.
  5. Place the flour in a third bowl.
  6. Dip each zucchini round into the flour and shake off the excess.
  7. Dip the zucchini round into the beaten eggs and then coat it with the breadcrumb mixture.
  8. Repeat for all zucchini rounds.
  9. Place the coated zucchini rounds onto a baking sheet lined with parchment paper.
  10. Drizzle the olive oil over the zucchini bites.
  11. Bake in the preheated oven for 18-20 minutes, or until golden and crispy.
  12. Remove from oven and let cool for a few minutes before serving.
