Ingredients:

  • 500g fresh squid, cleaned and cut into bite-sized pieces
  • 10-12 kumquats
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • Skewers

Instructions:

  1. If using wooden skewers, soak in water for at least 30 minutes before using them to prevent burning on the grill.
  2. In a large bowl, mix together garlic, olive oil, lemon juice, salt, and black pepper.
  3. Add cleaned squid to the bowl, and toss to coat well. Let it marinate for at least 30 minutes.
  4. Slice kumquats in half and remove any seeds.
  5. Thread squid and kumquats onto skewers, alternating between the two.
  6. Heat your grill to medium-high heat. Grill skewers for 2-3 minutes on each side, or until the squid is cooked through.
  7. Remove skewers from grill and serve hot.
