Zucchini stuffed with tomatoes and mozzarella
Ingredients:
- 4 medium-sized zucchinis
- 2 medium-sized tomatoes
- 1 cup of shredded mozzarella cheese
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and slice off the top stem. Cut the zucchinis in half lengthwise and scoop out the center to make a small hollow in each half.
- Dice the tomatoes into small pieces and scoop them into the hollowed-out zucchinis.
