Zucchini stuffed with tomatoes and mozzarella

Ingredients:

  • 4 medium-sized zucchinis
  • 2 medium-sized tomatoes
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis and slice off the top stem. Cut the zucchinis in half lengthwise and scoop out the center to make a small hollow in each half.
  3. Dice the tomatoes into small pieces and scoop them into the hollowed-out zucchinis.
  4. Sprinkle shredded mozzarella cheese on top of the tomatoes in each zucchini half.
  5. Drizzle olive oil over the stuffed zucchinis and season with salt and pepper.
  6. Bake in the oven for 25-30 minutes, or until the zucchinis are tender and the cheese has melted and turned golden on top.
  7. Remove from oven and let cool for a few minutes.
  8. Serve the zucchinis hot, garnished with fresh basil leaves (optional).
