Apple Muffin Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 medium apple, peeled and chopped
  • 1/2 teaspoon ground cinnamon

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners
  2. In a large bowl, mix together flour, sugar, baking powder and salt
  3. In a separate bowl, beat together milk, oil, and egg
  4. Stir wet ingredients into dry ingredients just until moistened
  5. Fold in chopped apple and cinnamon
  6. Spoon batter into prepared muffin cups, filling them about 2/3 full
  7. Bake for 20 to 25 minutes or until a toothpick inserted into a muffin comes out clean
  8. Cool muffins in the muffin cups for 5 minutes and then remove from the pans and place them onto a wire rack to cool completely
