Bricks with Cheese, Thyme and Olives Recipe

Ingredients:

  • 8 bricks (aka phyllo dough sheets), thawed
  • 8 ounces of shredded cheese (like cheddar or mozzarella)
  • 1/2 cup of chopped olives
  • 2 tablespoons of fresh thyme leaves, chopped
  • 1/4 cup of melted butter

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Lay out one brick on a flat surface and brush it with melted butter.
  3. Place another brick on top and brush with more butter. Repeat with four bricks in total, brushing each layer with butter (this will create 2 stacks of 4 layers each).
  4. Mix the shredded cheese, chopped olives, and thyme leaves in a bowl.
  5. Spoon the cheese mixture on top of one of the phyllo stacks, leaving about a 1/2 inch of space from the edges.
  6. Take the other phyllo stack and place it on top of the cheese mixture, pressing down to seal the edges.
  7. Cut the phyllo stack into 6-8 squares and place them on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, until the phyllo is golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
