Carrot Cake Recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots (about 3 medium-sized carrots)
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Cream Cheese Frosting Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C). Grease and flour two 9-inch (23cm) round cake pans or one 9×13-inch (23 x 33cm) rectangular pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, beat eggs, oil, sugar, and vanilla extract until well combined. Gradually stir in the dry ingredients until just combined.
  4. Stir in the grated carrots, chopped walnuts, and raisins (if using).
  5. Pour batter into prepared pan(s) and bake for 30-35 minutes for round cake pans or 40-45 minutes for a rectangular pan or until a toothpick inserted in the center comes out clean.
  6. Remove from oven and cool completely before frosting.
  7. To make the frosting, beat cream cheese and butter together until smooth. Add powdered sugar and vanilla extract, and beat until light and fluffy.
  8. Spread frosting on top of cake and serve.
