Chicken Broccoli and Mushroom Soup

Ingredients:

  • 1 pound chicken breast, cubed
  • 1 head broccoli, chopped
  • 8 oz. mushrooms, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. red pepper flakes (optional)

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned, about 5-7 minutes. Remove from pot and set aside.
  3. Add onion and garlic to the same pot and sauté for 2-3 minutes, until fragrant.
  4. Add mushrooms and broccoli and cook for an additional 5-7 minutes until vegetables are tender.
