Chorizo Puff Pastry Recipe

Ingredients:

  • 1 package puff pastry, thawed
  • 1 egg, beaten
  • 1/2 pound chorizo sausage
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, chopped
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 400°F.
  2. In a skillet over medium heat, cook the chorizo until browned and slightly crispy. Remove from the pan and set aside.
  3. In the same pan over medium heat, add the onion, garlic, and bell pepper. Sauté until the vegetables are soft, about 5 minutes.
  4. Stir in the smoked paprika, cayenne pepper, salt, and black pepper. Add the cooked chorizo and stir until combined. Remove from heat and let cool.
  5. Unroll the puff pastry and cut it into squares or circles (depending on your preference). Place a spoonful of the chorizo mixture in the center of each square and top with a sprinkle of Parmesan cheese.
  6. Brush the edges of the pastry with the beaten egg and fold the pastry over to create a turnover. Gently press the edges together to seal and crimp with a fork.
  7. Brush the top of each pastry with the remaining beaten egg and place on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until the pastry is golden brown and crispy.
  9. Let cool for a few minutes before serving.
