Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt.
  3. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Add egg yolk, vanilla extract, and 1 tablespoon of water. Mix until the dough comes together.
  5. Divide the dough in half and roll out each half onto a lightly floured surface to a thickness of about 1/8 inch.
  6. Using a 2 inch round cookie cutter, cut out the pastry dough and place them on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden brown. Remove from oven and let cool.
  8. Spread raspberry jam evenly over the bottom of half of the pastry rounds.
  9. Top with remaining pastry rounds.
  10. In a small bowl, combine powdered sugar and 1 tablespoon of milk. Mix until smooth and drizzle over the top of the pastries. Add an extra tablespoon of milk if needed for a thinner consistency.
