Congolese Recipe
Ingredients:
- 2 pounds chicken thighs and legs, bone-in and skin-on
- 4 tablespoons vegetable oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup roasted unsalted peanuts, finely chopped
- Salt and pepper to taste
- Chopped fresh cilantro leaves for garnish
Instructions:
- Preheat oven to 375°F (190°C).
- Heat vegetable oil in a large oven-safe Dutch oven or heavy pot over medium-high heat. Add chicken pieces and brown on all sides, about 10 minutes. Remove chicken and set it aside on a plate.
- Add the chopped onion and garlic to the same pot and cook until softened, about 5 minutes.
- Stir in smoked paprika, ground cumin, ground ginger, ground cinnamon, and cayenne pepper and cook for about 1 minute until fragrant.
- Add diced tomatoes with their juices and chicken broth to the pot, scraping up any browned bits from the bottom.
- Add chicken pieces back to the pot and bring to a simmer.
- Cover the pot and move it to the preheated oven.
- Bake for 45 minutes, then remove the pot from the oven.
- Sprinkle with finely chopped peanuts and season with salt and pepper to taste.
- Garnish with fresh cilantro leaves and serve hot with rice or bread.
