Congolese Recipe

Ingredients:

  • 2 pounds chicken thighs and legs, bone-in and skin-on
  • 4 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup roasted unsalted peanuts, finely chopped
  • Salt and pepper to taste
  • Chopped fresh cilantro leaves for garnish

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat vegetable oil in a large oven-safe Dutch oven or heavy pot over medium-high heat. Add chicken pieces and brown on all sides, about 10 minutes. Remove chicken and set it aside on a plate.
  3. Add the chopped onion and garlic to the same pot and cook until softened, about 5 minutes.
  4. Stir in smoked paprika, ground cumin, ground ginger, ground cinnamon, and cayenne pepper and cook for about 1 minute until fragrant.
  5. Add diced tomatoes with their juices and chicken broth to the pot, scraping up any browned bits from the bottom.
  6. Add chicken pieces back to the pot and bring to a simmer.
  7. Cover the pot and move it to the preheated oven.
  8. Bake for 45 minutes, then remove the pot from the oven.
  9. Sprinkle with finely chopped peanuts and season with salt and pepper to taste.
  10. Garnish with fresh cilantro leaves and serve hot with rice or bread.
