Curry Samosa Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup vegetable oil
- 1/4 teaspoon salt
- 1/4 teaspoon ajwain seeds
- 1/3 to 1/2 cup water
- 1 onion, chopped
- 2 potatoes, peeled and diced
- 1 carrot, diced
- 1/2 cup peas
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- Oil for frying
Instructions:
1. In a mixing bowl, combine flour, vegetable oil, salt, and ajwain seeds. Mix well.
2. Add water slowly and knead to form a smooth and firm dough. Cover and let it rest for 30 minutes.
3. Heat oil in a pan and sauté onions until translucent.
4. Add diced potatoes, carrots, and peas. Mix well.
5. In a separate pan, dry roast cumin seeds and coriander seeds until fragrant. Cool and grind to a fine powder.
6. Add the cumin-coriander powder, turmeric powder, garam masala powder, red chili powder, and salt to the vegetable mixture. Mix well and cook until vegetables are tender.
7. Divide the dough into 8-10 equal pieces and roll each piece into a thin circle.
8. Cut each circle into two halves. Take one half, and fold it to form a cone. Apply some water to the straight edge and seal the cone.
9. Fill the cone with the vegetable mixture and seal the top edge as well.
10. Heat oil in a deep pan for frying. Deep fry the samosas until they turn golden brown.
11. Serve hot with mint chutney or sweet tamarind chutney.
