Cyril Lignac-Style Chocolate Cake Recipe

Ingredients:

  • 200g dark chocolate (70% cocoa)
  • 200g butter
  • 4 eggs
  • 125g sugar
  • 50g flour
  • A pinch of salt

Instructions:

  1. Preheat the oven to 180°C.
  2. Grease a 20cm cake tin with butter and line the bottom with baking paper.
  3. Break the chocolate into small pieces and melt in a heatproof bowl placed over a pot of boiling water.
  4. Add the butter to the melted chocolate and stir until it’s well combined. Set aside to cool.
  5. In a separate bowl, beat the eggs and sugar until the mixture is light and fluffy.
  6. Sift the flour and salt into the egg mixture and mix until combined.
  7. Slowly pour the chocolate mixture into the egg mixture and fold gently until you have a smooth batter.
  8. Pour the batter into the prepared tin and smooth the surface with a spatula.
  9. Bake for 25-30 minutes or until a skewer inserted into the centre of the cake comes out clean.
  10. Remove the cake from the oven and allow it to cool in the tin for 5 minutes.
  11. Remove the cake from the tin and place it on a wire rack to cool completely before serving.
