Fava and Warm Onion Salad Recipe
Ingredients
- 1 cup of fava beans, fresh or frozen
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 1 lemon, juiced
- 2 tbsp of olive oil
- 1 tsp of paprika
- 1 tsp of cumin
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- In a pot of boiling water, cook the fava beans for 3 to 5 minutes or until tender. Drain and rinse with cold water. Peel the outer skin of the beans and set them aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions, paprika, cumin, salt and pepper. Cook for 6 to 8 minutes or until the onion is soft and translucent.

- Add the cooked fava beans to the onion mixture and sauté for 2 minutes or until heated through.
- Remove from heat and drizzle with lemon juice. Season with additional salt and pepper to taste.
- Garnish with chopped parsley and serve warm.
