Fava and Warm Onion Salad Recipe

Ingredients

  • 1 cup of fava beans, fresh or frozen
  • 1 large onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 lemon, juiced
  • 2 tbsp of olive oil
  • 1 tsp of paprika
  • 1 tsp of cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. In a pot of boiling water, cook the fava beans for 3 to 5 minutes or until tender. Drain and rinse with cold water. Peel the outer skin of the beans and set them aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions, paprika, cumin, salt and pepper. Cook for 6 to 8 minutes or until the onion is soft and translucent.
  3. Add the minced garlic to the skillet and cook for an additional 2 minutes or until fragrant.
  4. Add the cooked fava beans to the onion mixture and sauté for 2 minutes or until heated through.
  5. Remove from heat and drizzle with lemon juice. Season with additional salt and pepper to taste.
  6. Garnish with chopped parsley and serve warm.
