Fried Zucchini with Almonds, Curry Powder, Peppermint and Chorizo

Ingredients:

  • 4 medium-sized zucchinis, sliced into rounds
  • 1/2 cup of slivered almonds
  • 1 tablespoon of curry powder
  • A handful of fresh peppermint leaves, chopped
  • 200g of chorizo sausage, sliced into bite-sized pieces
  • 4 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. Spread slivered almonds on a baking sheet and roast for 5-7 minutes until golden brown. Set them aside.
  3. In a large pan, heat the olive oil and add the sliced chorizo. Cook for 5-7 minutes until the chorizo is crisp. Remove from the pan and set aside.
  4. In the same pan, add the zucchini rounds. Season with curry powder, salt, and pepper. Sauté over medium heat until they are golden brown and tender, about 5-7 minutes.
  5. Add chopped fresh peppermint leaves to the pan and mix well.
  6. To serve, top the fried zucchini with roasted slivered almonds and chorizo.
