Ginger Roasted Quinces

Ingredients:

  • 4 medium-sized quinces
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup water
  • 2 tablespoon unsalted butter

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Wash and dry quinces, halve and core each quince. Cut each half into slices about 1/2-inch thick.
  3. In a large bowl, mix honey, ginger, brown sugar, cinnamon, cardamom, and nutmeg.
  4. Add quince slices to the bowl and toss to coat evenly.
  5. Add water to a baking dish and place quince slices in the baking dish in a single layer.
  6. Cut butter into small pieces and scatter on top of the quince mixture.
  7. Cover with aluminum foil and bake for about 45 minutes.
  8. Remove the foil and continue baking for 15-20 minutes until the quinces are tender and caramelized on top.
  9. Remove the quinces from the oven and cool them for 10 minutes.
  10. Serve warm and drizzle with the remaining syrup from the baking dish. Garnish with chopped nuts or fresh herbs.
