Green Cabbage, Red Cabbage, Avocado, Tomato and Ginger Salad

Ingredients:

  • 1/2 head of green cabbage, finely sliced
  • 1/2 head of red cabbage, finely sliced
  • 2 ripe avocados, peeled and diced
  • 2 ripe tomatoes, diced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the green cabbage, red cabbage, avocados and tomatoes.
  2. In a small bowl, whisk together the grated ginger, olive oil, apple cider vinegar, salt and pepper to make the dressing.
