Ingredients:

  • 2 cups all-purpose flour
  • 3 eggs

  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. To make the pasta dough, place the flour on a clean work surface and make a well in the center. Crack the eggs into the well and add the salt. Gradually mix the flour into the eggs until a dough forms. Knead the dough for 10 minutes until smooth and elastic. Wrap the dough in plastic wrap and set aside for 30 minutes.
  2. While the dough rests, make the filling. In a skillet, melt 2 tbsp of butter over medium heat. Add the mushrooms and cook until tender and browned, about 10 minutes. Season with salt and pepper to taste.
  3. Roll out the dough using a pasta machine or a rolling pin until it’s about 1/8 inch thick. Cut the dough into circles using a cookie cutter or a glass.   4. Bring a large pot of salted water to a boil. Carefully drop the ravioli into the water and cook for 2-3 minutes until they float to the surface. Remove the ravioli with a slotted spoon and set them aside, reserving some of the pasta water for the sauce.
  5. To make the sauce, melt the remaining tablespoon of butter in a saucepan over medium heat. Add the heavy cream and bring to a simmer. Stir in the parmesan cheese and season with salt and pepper to taste. If the sauce is too thick, thin it out with some of the reserved pasta water.
  6. Serve the ravioli hot, topped with the creamy mushroom sauce.
