Lamb Shoulder Couscous Recipe

Ingredients

  • 1 tablespoon olive oil
  • 2 lb lamb shoulder, bone-in
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 1 cup canned diced tomatoes
  • 1 cup canned chickpeas, drained
  • 1 cup chopped carrots
  • 1/2 cup chopped dried apricots
  • 1/2 cup raisins
  • 1 cup couscous
  • salt and pepper to taste
  • fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
  2. Season the lamb shoulder with salt and pepper and brown it on all sides. Remove from the pot and set aside.
  3. Add the chopped onion and garlic to the pot and sauté until soft and fragrant, about 5 minutes.
  4. Stir in the spices (cumin, cinnamon, coriander, ginger, allspice, and cayenne) and cook for 1 minute until fragrant.
  5. Add chicken broth, diced tomatoes, chickpeas, chopped carrots, dried apricots, and raisins to the pot. Stir well.
  6. Return the lamb shoulder to the pot. Bring the liquid to a boil.
