Lamb Shoulder Couscous Recipe
Ingredients
- 1 tablespoon olive oil
- 2 lb lamb shoulder, bone-in
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon ground allspice
- 1/4 teaspoon cayenne pepper
- 2 cups chicken broth

- 1/2 cup raisins

Instructions
- Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat.
- Season the lamb shoulder with salt and pepper and brown it on all sides. Remove from the pot and set aside.
- Add the chopped onion and garlic to the pot and sauté until soft and fragrant, about 5 minutes.
- Stir in the spices (cumin, cinnamon, coriander, ginger, allspice, and cayenne) and cook for 1 minute until fragrant.
- Add chicken broth, diced tomatoes, chickpeas, chopped carrots, dried apricots, and raisins to the pot. Stir well.
- Return the lamb shoulder to the pot. Bring the liquid to a boil.
- Cover the pot and place it in a preheated oven at 350°F. Cook for 2 hours or until the lamb is tender and falling off the bone.
- Remove the pot from the oven and transfer the lamb to a cutting board. Remove the bone and shred the meat with a fork.
- Return the shredded lamb to the pot. Stir in the couscous. Cover the pot and let it sit for 10 minutes until the couscous has absorbed the liquid.
- Fluff the couscous with a fork. Adjust seasoning with salt and pepper if needed.
- Garnish with fresh chopped parsley.
