Lentil Curry Recipe

Ingredients:

  • 1 cup dried lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • Fresh cilantro (optional)

Instructions:

  1. Rinse the lentils under cold water and drain.
  2. In a large pot, heat the vegetable oil over medium-high heat. Sauté the onion until soft and translucent, about 5 minutes.
  3. Add the garlic and ginger and cook for another 2 minutes.
  4. Add the curry powder, cumin, turmeric and salt to the pot, and stir well.
  5. Add the lentils to the pot and stir until they are coated in the spice mixture.
  6. Add the canned tomatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
  7. Stir in the coconut milk and cook for another 5-10 minutes.
  8. Garnish with fresh cilantro (optional) and serve hot over rice.
