Lentil Curry Recipe
Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 cup coconut milk
- Fresh cilantro (optional)
Instructions:
- Rinse the lentils under cold water and drain.
- In a large pot, heat the vegetable oil over medium-high heat. Sauté the onion until soft and translucent, about 5 minutes.

- Stir in the coconut milk and cook for another 5-10 minutes.
- Garnish with fresh cilantro (optional) and serve hot over rice.
