Purslane Salad Recipe
Ingredients:
- 1 bunch of purslane, washed and dried
- 2 ripe tomatoes, diced
- 1 small red onion, sliced
- 1 green pepper, sliced
- 1/4 cup of fresh parsley, chopped
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions:
- Wash and dry the purslane. Remove any thick stems and chop the leaves into bite-sized pieces.
- In a large bowl, mix together the purslane, tomatoes, red onion, green pepper, and fresh parsley.
- In a small bowl whisk together the olive oil and lemon juice. Pour over the salad and toss to coat.
- Season with salt and pepper to taste.
