Red beet pickles – Delicious


Red Beet Pickles

Ingredients:

  • 2 lbs. red beets
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 cup sugar
  • 2 tsp. salt
  • 1 cinnamon stick
  • 5 whole cloves

Instructions:

  1. Trim and wash the beets, leaving an inch of stem and root intact.
  2. Bring a large pot of water to a boil and simmer the beets until tender, about 30-40 minutes.
  3. Drain and rinse the beets under cold water. Peel, then cut the beets into 1/4 inch slices.
  4. In a medium pot, combine the apple cider vinegar, water, sugar, salt, cinnamon stick, and whole cloves. Bring to a simmer over medium heat until the sugar has dissolved.
  5. Add the beet slices to the pot and simmer for 10 minutes.
  6. Remove the pot from the heat and let cool. Transfer the pickled beets to a sterile glass jar.
  7. Cover with the pickling liquid and seal the jar. Refrigerate before serving.
