Red Beet Pickles
Ingredients:
- 2 lbs. red beets
- 1 cup apple cider vinegar
- 1 cup water
- 1 cup sugar
- 2 tsp. salt
- 1 cinnamon stick
- 5 whole cloves
Instructions:
- Trim and wash the beets, leaving an inch of stem and root intact.
- Bring a large pot of water to a boil and simmer the beets until tender, about 30-40 minutes.
- Drain and rinse the beets under cold water. Peel, then cut the beets into 1/4 inch slices.
- In a medium pot, combine the apple cider vinegar, water, sugar, salt, cinnamon stick, and whole cloves. Bring to a simmer over medium heat until the sugar has dissolved.
- Add the beet slices to the pot and simmer for 10 minutes.
- Remove the pot from the heat and let cool. Transfer the pickled beets to a sterile glass jar.
- Cover with the pickling liquid and seal the jar. Refrigerate before serving.
