Restless Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped dried fruits (such as raisins or cranberries)

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate mixing bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Whisk together until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Add in the cinnamon, nutmeg, chopped walnuts, and dried fruits. Gently stir until well mixed.
  5. Heat a large non-stick skillet over medium heat. Lightly coat the surface of the skillet with oil or cooking spray.
  6. Using a 1/4 cup measuring scoop, pour the pancake batter onto the skillet. Cook until bubbles form on the surface of the pancake and the bottom is lightly golden, about 2-3 minutes.
  7. Flip the pancake and cook until the other side is golden, about 1-2 minutes more.
  8. Repeat until all the batter is used up.

Serving Suggestions:
