Restless Pancakes Recipe
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 egg
- 3/4 cup milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract

Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate mixing bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Whisk together until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Add in the cinnamon, nutmeg, chopped walnuts, and dried fruits. Gently stir until well mixed.
- Heat a large non-stick skillet over medium heat. Lightly coat the surface of the skillet with oil or cooking spray.
- Using a 1/4 cup measuring scoop, pour the pancake batter onto the skillet. Cook until bubbles form on the surface of the pancake and the bottom is lightly golden, about 2-3 minutes.
- Flip the pancake and cook until the other side is golden, about 1-2 minutes more.
- Repeat until all the batter is used up.
