Ingredients:
- 4 Salmon steaks, deboned and skin removed
- 1 tbsp Olive oil
- 1 tbsp Butter
- 1 large Onion, finely chopped
- 3 Garlic cloves, minced
- 1 tbsp Yellow curry powder
- 1 tsp Turmeric powder
- 1 tsp Paprika
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/2 tsp Cayenne pepper
- 1 can coconut milk
- 3 tbsp Tomato paste
- 1 tbsp Brown sugar
- 1 tbsp Lemon Juice
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish

- Stir in the tomato paste and brown sugar, followed by the coconut milk and lemon juice and bring to a simmer, stirring occasionally.
- Reduce heat to medium-low and add the salmon steaks and let cook for 10-12 minutes or until the salmon is cooked through and the sauce is thickened.
- Season with salt and pepper to taste.
- Serve hot with steamed rice or flatbread, garnished with fresh cilantro.
