Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 4 cups vegetable broth
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 tbsp butter

  • 2 tbsp brandy
  • Salt and pepper to taste

Instructions

  1. Place the peeled shrimp in your Thermomix and pulse for a few seconds to roughly chop the shrimp.

  3. Heat the olive oil and butter in your Thermomix at 100°C for 2 minutes on speed 1.
  4. Add the diced onion and minced garlic and sauté at 100°C for 5 minutes on speed 1.

  6. Add the brandy and stir until it evaporates.

  9. Stir in the heavy cream and cook at 90°C for 5 minutes on speed 1.
  10. Remove from heat and puree the mixture in your Thermomix for 1-2 minutes on speed 10 until smooth.
  11. Strain the mixture through a fine-mesh strainer and discard any solids.
  12. Transfer the bisque to bowls and serve hot.
