Ingredients

  • 8 oz. dried noodles
  • 2 tbsp vegetable oil
  • 1 lb. boneless, skinless chicken breast, cut into small pieces
  • 1 large carrot, sliced diagonally
  • 2 garlic cloves, minced
  • 1/4 cup soy sauce
  • 1/4 cup oyster sauce
  • 1/4 cup chicken broth
  • 1 tsp sugar
  • 1/4 tsp black pepper
  • 2 green onions, sliced diagonally

Directions

  1. Bring a large pot of water to a boil and cook noodles according to package directions. Drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of oil over high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from pan and set aside.
  3. In the same pan, heat 1 tablespoon of oil. Add sliced carrots and garlic and cook for 2-3 minutes until tender.
  4. In a small bowl, whisk together soy sauce, oyster sauce, chicken broth, sugar, and black pepper. Add sauce to the pan and stir to combine.
  5. Return chicken to the pan along with the cooked noodles. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Garnish with green onions and serve immediately.
