Tian Provençal Recipe
Ingredients
- 2-3 large potatoes, sliced thinly
- 2-3 large zucchinis, sliced thinly
- 2-3 large tomatoes, sliced thinly
- 1 onion, sliced
- 2-3 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 tablespoon of fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a pan. Add the onions and garlic, and sauté until soft.
- Remove from the heat and spread the onions and garlic in the bottom of a 9×13 inch baking dish.
- Arrange the sliced potatoes, zucchinis, and tomatoes in alternating layers on top of the onions.
- Season each layer with salt, pepper, and fresh thyme leaves.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and the top is golden brown.
- Serve hot or at room temperature.
