Tian Provençal Recipe

Ingredients

  • 2-3 large potatoes, sliced thinly
  • 2-3 large zucchinis, sliced thinly
  • 2-3 large tomatoes, sliced thinly
  • 1 onion, sliced
  • 2-3 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 tablespoon of fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a pan. Add the onions and garlic, and sauté until soft.
  3. Remove from the heat and spread the onions and garlic in the bottom of a 9×13 inch baking dish.
  4. Arrange the sliced potatoes, zucchinis, and tomatoes in alternating layers on top of the onions.
  5. Season each layer with salt, pepper, and fresh thyme leaves.
  6. Cover the baking dish with aluminum foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15-20 minutes until the vegetables are tender and the top is golden brown.
  8. Serve hot or at room temperature.
