Vegetarian lasagna


Vegetarian Lasagna Recipe

This delicious and easy-to-make vegetarian lasagna is perfect for a hearty meal or to feed a crowd.

Ingredients:

  • 1 box of lasagna noodles
  • 1 package of shredded mozzarella cheese
  • 1 can of tomato sauce
  • 1 can of diced tomatoes
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • 1 tsp of dried basil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F.
  2. Cook your lasagna noodles according to the package directions. Once cooked, drain the noodles and set them aside.
  3. In a large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is tender and translucent.
  4. Add the sliced zucchini and yellow squash to the pan, and sauté until tender.
  5. Next, add the can of tomato sauce and diced tomatoes to the pan. Bring to a simmer, add the basil, salt, and pepper, and let simmer for 10 minutes.
  6. To assemble the lasagna, spread a thin layer of the tomato sauce mixture on the bottom of a 9×13 baking dish. Add a layer of the cooked lasagna noodles, followed by a layer of the tomato sauce mixture, and then a layer of shredded mozzarella cheese.
  7. Repeat these layers until all ingredients are used up, ending with a layer of mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the aluminum foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Let the lasagna cool for a few minutes before serving.

Serving suggestions:

Garnish with fresh basil and serve with a side salad and garlic bread for a complete and satisfying meal.
