Antillean Vegetable Pudding Recipe

Ingredients

  • 1 pound grated taro root
  • 1 pound grated yam
  • 1/2 pound grated carrots
  • 1/2 pound grated pumpkin
  • 1/2 pound grated sweet potatoes
  • 1/2 pound grated beets
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup coconut milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the grated taro root, yam, carrots, pumpkin, sweet potatoes and beets.
