Arugula Quiche Recipe

Ingredients:

  • 1 unbaked 9-inch pie crust
  • 2 tablespoons butter
  • 1/2 cup chopped shallots
  • 1 garlic clove, minced
  • 4 cups fresh arugula, washed and dried
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 1 1/2 cups milk
  • 1/2 cup grated Parmesan cheese

Directions:

  1. Preheat the oven to 375°F.
  2. Place the unbaked pie crust in a 9-inch pie dish and pierce the bottom with a fork. Set aside.
  3. In a large skillet, melt the butter over medium heat. Add the shallots and garlic and sauté until softened, about 2-3 minutes.
  4. Add the arugula to the skillet and sauté until wilted, about 2-3 minutes. Season with paprika, salt, and black pepper. Remove from heat and let cool for a few minutes.
  5. In a mixing bowl, whisk together the eggs and milk until well combined.
  6. Stir the cooled arugula mixture into the egg mixture.
  7. Pour the mixture into the pie crust. Sprinkle grated Parmesan cheese over the top.
  8. Bake for 35-40 minutes, or until the center is set and the crust is lightly golden brown.
  9. Let the quiche cool for at least 10 minutes before slicing and serving.
