Asturian Fabada Recipe

Ingredients

  • 500g white beans (soaked in water for 12 hours)

  • 2 bay leaves

Instructions

  1. Drain the white beans from the water and rinse them well.
  2. In a large pot, add the beans, onion, garlic, bay leaves and water.
  3. Bring to a boil and then simmer for about 1 hour.
  4. In a frying pan, add the chopped bacon and cook until crispy. Remove from the pan and set aside.
  5. Add the chorizo and black pudding to the same frying pan and cook until they are browned. Remove from the pan and set aside.
  6. After an hour of simmering, add the ham hock, cooked bacon, chorizo and black pudding to the pot with the beans.
  7. Simmer for another hour until the beans are fully cooked and the ham hock is tender.
  8. In a separate pan, heat the olive oil and add the smoked paprika. Stir well and then add it to the pot with the beans and other ingredients.
  9. Season with salt and pepper to taste.
