Asturian Fabada Recipe

Ingredients
- 500g white beans (soaked in water for 12 hours)
- 1 liter of water

- 150g ham hock
- 2 bay leaves
- 2 teaspoons smoked paprika

Instructions
- Drain the white beans from the water and rinse them well.
- In a large pot, add the beans, onion, garlic, bay leaves and water.
- Bring to a boil and then simmer for about 1 hour.
- In a frying pan, add the chopped bacon and cook until crispy. Remove from the pan and set aside.
- Add the chorizo and black pudding to the same frying pan and cook until they are browned. Remove from the pan and set aside.
- After an hour of simmering, add the ham hock, cooked bacon, chorizo and black pudding to the pot with the beans.
- Simmer for another hour until the beans are fully cooked and the ham hock is tender.
- In a separate pan, heat the olive oil and add the smoked paprika. Stir well and then add it to the pot with the beans and other ingredients.
- Season with salt and pepper to taste.
