Ingredients:

  • 2 medium aubergines, sliced into rounds
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup vegetable oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 200°C (400°F)
