Auvergne Pounti

Ingredients:

  • 300g Swiss chard
  • 200g prunes
  • 200g bacon, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg
  • 200g cornmeal
  • 500ml milk
  • Butter for greasing

Instructions:

  1. Prepare the Swiss chard by cleaning them and removing the stems, then chop them into small pieces.
  2. Pit the prunes and chop them into small pieces.
  3. In a pan, sauté the bacon until crispy and golden. Remove from the pan and set aside.
  4. In the same pan, sauté the onion and garlic until fragrant and soft.
  5. Mix the cornmeal, milk, salt, black pepper and nutmeg in a mixing bowl. Let it rest for 10 minutes.
  6. Add Swiss chard, prunes and bacon to the cornmeal mixture. Mix well.
  7. Grease a 25cm round dish with butter.
  8. Pour in the mixture and bake in a preheated oven of 170C for 1 hour or until golden brown on top.
  9. Remove from oven and let it cool for 5 minutes before serving.
