Bacon and Aubergine Tortilla

Ingredients

  • 8 strips bacon, chopped
  • 1 medium aubergine, diced
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 6 large eggs, beaten
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, cook the bacon over medium heat until crisp. Remove bacon from pan; drain on paper towels. Reserve 2 tablespoons of bacon grease in the pan.
  2. Add the aubergine, onion, and garlic to the skillet. Cook for 5-7 minutes or until tender.
  3. In a mixing bowl, combine the eggs, oregano, salt, pepper, and Parmesan cheese. Beat well.
  4. Pour the egg mixture into the skillet with the aubergines and onions. Add the bacon. Cook over medium heat, lifting the edges of the tortilla and letting the uncooked eggs run underneath until the eggs are set, about 8-10 minutes.
  5. Remove the skillet from the heat. Cover with a platter and invert the skillet so the tortilla is on the platter. Let cool for a few minutes and serve.
