Bacon and Pine Nut Cake Recipe

Ingredients:

  • 12 rashers of streaky bacon, trimmed
  • 2 cups self-raising flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup pine nuts, toasted
  • 1 cup milk
  • 2 eggs, lightly beaten
  • 1/3 cup olive oil
  • 1/2 cup grated parmesan cheese

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a 9-inch (23cm) cake tin with non-stick baking paper.
  2. Cut 6 of the bacon rashers into small pieces and set aside. Chop the remaining 6 rashers into larger pieces and set aside.
  3. In a large mixing bowl, sift together the flour, salt and pepper. Add in the chopped bacon pieces and pine nuts, and stir through until evenly distributed.
