Ingredients:
- 12 rashers of streaky bacon, trimmed
- 2 cups self-raising flour
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup pine nuts, toasted
- 1 cup milk
- 2 eggs, lightly beaten
- 1/3 cup olive oil
- 1/2 cup grated parmesan cheese
Instructions:
- Preheat your oven to 350°F (180°C) and line a 9-inch (23cm) cake tin with non-stick baking paper.
- Cut 6 of the bacon rashers into small pieces and set aside. Chop the remaining 6 rashers into larger pieces and set aside.
- In a large mixing bowl, sift together the flour, salt and pepper. Add in the chopped bacon pieces and pine nuts, and stir through until evenly distributed.
- In a separate bowl, whisk together the milk, eggs and olive oil, and then pour this mixture into the dry ingredients. Mix until well combined.
- Add in the grated parmesan cheese and mix through the batter.
- Pour the batter into the prepared tin and smooth out the surface. Arrange the larger bacon pieces over the top of the batter, pressing them in slightly.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool in the tin for 5 minutes before transferring it to a wire rack to cool completely.
