Bar In Salt Crust Recipe

Ingredients:

  • 1 whole sea bar, gutted and scaled
  • 4 egg whites
  • 2.5 kg kosher salt
  • 1 bunch fresh rosemary
  • 1 lemon, sliced

Directions:

  1. Preheat oven to 200°C (400°F)
  2. In a large bowl, mix the egg whites, kosher salt and rosemary until combined.
  3. Add some of the egg mixture to the bottom of a baking dish, enough to create a bed for the fish to lay on.
  4. Place the fish on top of the bed of salt mixture and fill the cavity with the lemon slices and remaining salt mixture.
  5. Pack the salt mixture tightly around the fish, completely covering it.
  6. Bake for approximately 30-40 minutes or until internal temperature reaches 60°C (140°F).
  7. Once cooked, using a knife, crack the salt crust open. Remove the fish from the salt crust and carefully peel away the skin and discard.
  8. Remove the fillets from the fish, and serve immediately.
