Bar In Salt Crust Recipe
Ingredients:
- 1 whole sea bar, gutted and scaled
- 4 egg whites
- 2.5 kg kosher salt
- 1 bunch fresh rosemary
- 1 lemon, sliced
Directions:
- Preheat oven to 200°C (400°F)
- In a large bowl, mix the egg whites, kosher salt and rosemary until combined.
- Add some of the egg mixture to the bottom of a baking dish, enough to create a bed for the fish to lay on.
- Place the fish on top of the bed of salt mixture and fill the cavity with the lemon slices and remaining salt mixture.
- Pack the salt mixture tightly around the fish, completely covering it.
- Bake for approximately 30-40 minutes or until internal temperature reaches 60°C (140°F).
- Once cooked, using a knife, crack the salt crust open. Remove the fish from the salt crust and carefully peel away the skin and discard.
- Remove the fillets from the fish, and serve immediately.
