Barbecued Lobster: Gourmet Recipe

Ingredients:

  • 2 live lobsters (around 1 1/2 to 2 pounds each)
  • 4 cloves of garlic, minced
  • 1/2 cup of extra-virgin olive oil
  • 1/4 cup of fresh lemon juice
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1/2 teaspoon of smoked paprika
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat the barbecue to medium-high heat (around 400°F).
  2. Using a sharp knife, split each lobster in half lengthwise. Remove and discard the stomach and the intestinal tract (the dark vein running along the tail). Brush the lobster flesh with a bit of olive oil.
  3. In a small bowl, whisk together the minced garlic, olive oil, lemon juice, soy sauce, honey, smoked paprika, salt and black pepper.
  4. Place the lobster halves flesh side down on the barbecue grates and brush with some of the marinade. Cook for about 5 minutes, until grill marks have formed.
  5. Flip the lobster halves and brush with more marinade. Cook for another 5 minutes.
  6. At this point, the shell of the lobster should have turned bright red and the flesh should be opaque and slightly charred.
  7. Remove the lobster halves from the grill and brush with more marinade.
  8. Serve with lemon wedges and fresh parsley.
