Barbecued Lobster: Gourmet Recipe
Ingredients:
- 2 live lobsters (around 1 1/2 to 2 pounds each)
- 4 cloves of garlic, minced
- 1/2 cup of extra-virgin olive oil
- 1/4 cup of fresh lemon juice
- 2 tablespoons of soy sauce
- 1 tablespoon of honey
- 1/2 teaspoon of smoked paprika
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat the barbecue to medium-high heat (around 400°F).
- Using a sharp knife, split each lobster in half lengthwise. Remove and discard the stomach and the intestinal tract (the dark vein running along the tail). Brush the lobster flesh with a bit of olive oil.
- In a small bowl, whisk together the minced garlic, olive oil, lemon juice, soy sauce, honey, smoked paprika, salt and black pepper.
- Place the lobster halves flesh side down on the barbecue grates and brush with some of the marinade. Cook for about 5 minutes, until grill marks have formed.
- Flip the lobster halves and brush with more marinade. Cook for another 5 minutes.
- At this point, the shell of the lobster should have turned bright red and the flesh should be opaque and slightly charred.
- Remove the lobster halves from the grill and brush with more marinade.
- Serve with lemon wedges and fresh parsley.
